**Curried lentils** A deliciously satisfying dish...
Ingredients:
1 cup brown or green lentils
4 cups, plus 1 tbsp, vegetable broth
1 medium onion, chopped
3 cloves garlic, chopped
2 carrots, diced
2 celery stalks, diced
2 cups kale, finely chopped
2 tsp curry powder
1-15 oz can diced tomatoes (do not drain)
3 tbsp fresh cilantro, chopped
salt and pepper to taste Rinse lentils in strainer. Heat 1 tbsp broth in medium soup pot. Add onion and sauté over medium heat until translucent. Add garlic, carrots, celery, and kale. Sauté for 5 minutes. Stir in curry powder and add lentils, broth, and tomatoes. Bring to a boil, reduce heat to medium, and simmer uncovered until lentils and vegetables are tender; about 30 minutes. Add cilantro, salt, and pepper
